Why do we love beef jerky but hate dried / stringy / not tender beef?

    Just wonder what the science/physiology behind it - of course, some people hate beef jerky and love overcooked tough beef.

    It dates back to our Native American fore-fathers. Specifically, the Comanche peoples who traded w/the taibo for tons of buffalo jerky in return for white liquor, guns, bullets that didn't fire and fancy, ornamental headdresses pilfered from the Kickapoo tribe.


    Ok, really I don't know, but that souned pretty good didn't it?
