I understand that you can have a stopover when booking your award flights on United but I don't see how to do it on their website?

You can try on the website by choosing the multi-city option and putting in the 3 legs you want to book (e.g. NYC-LHR, LHR-FRA, FRA-NYC). Sometimes it works great and other times it fails miserably. If you get errors or don't see the flights you want try searching the individual flights as one-way options, write down the flights you want and then call in and have an agent book it.

Ditto what WA says above. I generally use something like ita to find the flights I'm looking for and then try and get it to ticket via UA. It's kind of a mixed bag to get UA To ticket certain multi-city options but I've never had an issue getting a 1K agent to book it for me.
