I have done pretty well with a few credit cards - Amex Platinum, Chase Sapphire, and some others. Whenever I have signed up for a card I get one for myself and my wife - using the same number. I am looking to get some new cards, and maybe cancelling my wife's Amex and Chase and getting hers separately. Can this be done?

If you mean you have had your wife as an additional authorized user on cards that are in your name, then yes, the conventional wisdom is that you should generally be able to open new accounts in her name and get the sign-up bonuses again. There are no guarantees, but it has been most people's experience that being an authorized user is not the same as being a "cardholder" for the purposes of earning a new bonus.
