New FULL Virgin America Fall 2014 Menu

    Earlier today, I shared some of the new dishes from Virgin America‘s Fall 2014 menu and now I’ve got the whole thing for you. Check it out below: FIRST CLASS Descriptions Breakfast Chive Cheese Omelet Omelet made with chives, Monterey jack and parmesan cheeses, served with orange and purple herb roasted sweet potatoes, sautéed shitake mushrooms, sugar snap peas with chicken apple sausage. Served with a fruit salad of orange, mango, blackberries, strawberries with toasted slivered almonds and honey cardamom syrup. Hot Steel Cut Oatmeal Organic steel cut oatmeal served with optional dried apricots, currants and almonds and brown sugar. Fruit Plate and Granola Cluster of red grapes, pineapple, grapefruit, kiwi, golden berries and strawberry served with strawberry yogurt and optional Gluten Free Udi’s Granola. All American Breakfast Soft scrambled chive eggs with chive roesti potatoes, roasted roma tomatoes, optional apple wood smoked bacon served with whole wheat toast and blackberry preserves. Served with a fruit salad of pineapples, blueberries, oranges, strawberries and kiwi with a mango mint lime syrup. Appetizer Cocktail Snack Warm mixed nuts served with drinks after takeoff. Grilled Mushroom Medley with Bresaola Mesclun lettuce mix topped with sautéed wild mushroom mix with toasted hazelnuts and slices of watermelon radish and optional shaved parmesan and Dijon sherry vinaigrette and optional thinly sliced Bresaola beef. Orange Pistachio Salad with Smoked Chicken Mizuna and Belgian Endive mix topped with orange segments, pistachio nuts and chervil served with a fig, muscatel vinaigrette and optional smoked chicken. Entrees Roasted Chicken with Artichokes Sumac herb marinated skin-on roasted chicken breast served with marinated gigante beans, seared artichokes, roasted radish mix and caramelized fennel with sherry chicken jus, garnished with salsa rustica of charred tomatoes, onion, poblano, capers and anchovies. Spicy Ginger Pepper Noodles Lo mein noodles with sautéed Chinese long beans, red bell peppers and onions topped with sautéed shitake and oyster mushroom mix and a spicy garlic ginger pepper sauce, garnished with optional scallions and cilantro. Salmon Soy Ginger Salad Mixed farro and red rice salad tossed with arugula pesto, sugar snap peas, seasoned with togarashi, English cucumber slices, radish slices, watercress, cilantro, topped with soy ginger marinated salmon. Served with sesame honey vinaigrette and optional toasted slivered almonds. Grilled Filet of Beef Grilled beef filet served with wilted arugula and sautéed leeks and wild mushroom medley, charred herb corn topped with a demi port balsamic jus. Deconstructed Vegetable Pot Pie Roasted Idaho potatoes and butternut squash, sautéed button mushrooms, roasted baby carrots and sautéed kale topped with a sage, thyme, béchamel sauce topped with a togarashi dusted puff pastry. Marrakesh Chicken Salad Ras el hanout and herb roasted chicken breast served on a mixed farro and red rice salad with zaatar vinaigrette, grilled yellow and green squash, grilled marinated Portobello, red cherry tomatoes served with zaatar vinaigrette and optional feta cheese. Desserts Humphry Slocombe Ice Cream Virgin America’s signature flavor #ButterByMoodlight, brown butter ice cream with a berry compote swirl is paired with a scoop of Outside Lands Chocolate Gold Rush, dark chocolate ice cream with chunks of bittersweet chocolate covered cones. Chocolate Hazelnut Feuilletine by Jin Patisserie Bittersweet chocolate mousse layer with chocolate sponge and crunchy hazelnut feuilletine. Red Wine The Messenger Number One, Red Blend Circadia Cabernet Sauvignon Onlooker Centeral Coast Red Blend Callia Alta Shiraz White Wine Etras Albarino Chateau Ducasse Graves Blanc Circadia Chardonnay Matchbook Chardonnay Callia Alta Pinot Grigio MAIN CABIN Chicken & Salami Sandwich Genoa salami, sliced chicken breast, oven-roasted yellow tomato, arugula, grilled zucchini and lemon pesto spread, all sandwiched between a pretzel roll. Served with a Dijon mustard packet and Nib Mor Dark Chocolate square. Pastrami on Marble Rye Sandwich Marbled rye, topped with sliced beef pastrami, caramelized yellow onions, swiss cheese, and kale-broccoli slaw in a horseradish cream sauce. Served with a Dijon mustard packet and a Nib Mor Dark Chocolate square. Artisan Cheese Box (Travel Light) Sampling of smoked gouda, mild cheddar, muenster, and camembert cheeses, nestled alongside a green grape cluster, dried apple, and apricot. Served with gluten-free olive oil and sea salt crackers. Protein Plate A cage-free hard-boiled egg, smoked gouda, mild cheddar, and muenster cheeses; a grilled chicken breast slice; red grape tomatoes, carrot, celery, and cucumber batons; wheat mini pita rounds; and a green grape cluster. Served with Greek yogurt hummus. Autumn Veggie Wrap Lemon pesto salad with farro dressed in edamame and roasted red pepper hummus, baby spinach, roasted butternut squash and zucchini mixed, with crumbled feta cheese, all wrapped in a spinach tortilla. Served with a tropical fruit salad of pineapple, grape, mango and strawberry. Mixed Berry Yogurt Parfait with Gluten Free Granola Strawberries, raspberries, and blueberries in low fat plain yogurt, all drizzled with clover-grade honey. Served with Udi’s gluten-free granola. PB&J Sandwich Creamy peanut butter and strawberry jam spread between sliced wheat bread. Served with Tasty Brand Organic Fruit Snacks.
