so I was at one of our local Mexican markets today and beef shanks were $.98lb, it was cold here today in Chicago so I decided a good crock pot meal would be nice for dinner. I'm back home and as I'm browing the shanks on the stove, a thought occurs to me, I'm going to try and make some bulgogi tacos. I finish browning the shanks and place them & 1 large sliced onion in the crock pot. Then add some beef stock and Korean bulgogi marinade, cooked the shanks for 5 hours on low until fork tender. Shredded the beef and served on tortillas with the soft cooked onions, chopped cilantro, avocado, bean sprouts. Delicious!!
