I usually just one connection domestic to international and have not had a problem getting into the United Club lounges, am 1k. However here is my return itinerary for up and coming trip LIM IAH SFO YVR, I know I can access the lounges in LIM and SFO, what about the IAH connection?

Yes. You are a *G flying in conjunction with an international itinerary. That gets you in.

I don't believe the official rules allow this, but practically speaking, you can usually get in.

That rule is incomplete. Presenting a BP at the gateway lounge will permit access but it is also permitted at other *A member operated lounges throughout the journey.

As a 1K that last bit is what really matters.
