Saw the programme yesterday - fascinating take on improving flavours and really admired Heston's commitment to cracking the problem. The featured crew warmed up too throughout the programme and it was good to see their spirit. Not sure of the so called 'taste panel' which just seemed like a bunch of marketing types. Nothing wrong with marketing types (speaking as one) - but I'd have thought they could have found greater expertise to participate. And I don't mean chefs - but people with the same approach to thinking holistically about the problem as Heston.
