Happy Thanksgiving

    So ... what are you statesiders doing today?

    I'm on break, having put the two turkeys (heirloom - a something
    red and a something white; I was told by the grower but forgot -,
    7 1/2 and 11 1/2 lb respectively) in the oven and made the squash
    (a butternut with olive oil and salt and a hybrid between a pumpkin
    and something even more tasteless, doctored with butter, rum, brown
    sugar, and maple syrup), stock for gravy, and bread dressing. Other
    people are contributing mashed potatoes, gluten-free dressing (I
    shudder), pea salad, greens, and an assortment of pies and cookies.
    After my nap I'll make the gravy, reheat what has to be reheated,
    carve the birds, and sit down with fourteen other happy people for
    the meal of the year.

    There's a lot to be thankful for.

    It is, heck of a meal.

    Even though my Mom is a terrific cook and my brother & I are no slouches either, she wanted the entire family to go to the University Club in Chicago so no one had to cook, clean, entertain. While nice, I miss leftovers!!!!

    For Friday night, I prepared a seafood dinner. The starter: Mexican shrimp cocktail (much different than a steakhouse/traditional shrimp cocktail). Followed by broiled lobster tails, sauteed sole w/a cream crab sauce. My brother prepared oven roasted squash with quinoa stuffing w/a bit of cheese.

    but back to Thanksgiving. I grew up with stuffing that had Jones sausage crumbles in it. That flavor profile is the bar I use to judge all stuffings. I have found one that I would happily serve as well, Chef Jonn Besh's
