In a few months, I will be flying from ORD to CDG roundtrip on AF booked on a DL flight number in W (premium economy). I was able to spend 15,000 miles and upgrade one of the segments to business. Still hoping for availability on the other... My ticket shows now that I'm in "O" class-- a business award. Will I still earn miles for the W fare that I purchased, or did I sacrifice those miles to sit up front?

You should receive the miles of your original booking class. I have no experience with Delta, but that the way it works for every other airline I've done it with.

I imagine it'll show up as fare class paid/flown W/O.

This is indeed the DL rule, although with the class flown the same as for an award ticket, one might have to ask for the miles.
