Does anyone know if there is public access to the load history of specific flight numbers/dates? I am trying to determine which future flight would be a best bet for securing an EVIP upgrade.

That would fall in the highly proprietary category...something not published.

That being said, evips can be used to confirm upgrades way in advance. What date and routes are you thinking of traveling? You can simply call AA and ask them if the appropriate category is available. If it is, just book it. There is no upgrade window as there are for 500 mile segment upgrades There's not much need for heavy historic research.

Or even better still .. invest in the relatively low cost of a subscription to Expert Flyer where one can indentify the availibility such inventory and also use it determine a pattern of the loading of such.

Particularly low if you try the 5-day free trial!
